Incredibly Easy Grilled Chicken Berry Salad Recipe

Ingredients

Salad

  • 4 boneless, skinless chicken breasts
  • 16 ounces baby spinach
  • 1 pint strawberries, hulled and halved
  • 1 pint blueberries
  • 1/2 cup sliced almonds
  • 1/2 cup red onion, thinly sliced
  • 1 cup blue cheese

Dressing

  • 1 cup raspberries
  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1/2 tsp salt

Instructions

Salad

Salt and pepper chicken then grill over medium heat until cooked through. Thinly slice.

  1. Divide spinach, strawberries, blueberries, almonds, onions, and blue cheese evenly amongst 4 bowls. 

  2. Top salads with sliced chicken.

Dressing

  1. Add all dressing ingredients to a blender. Blend until pureed. 

  2. If desired, strain seeds from the dressing.

  3. Serve dressing alongside salad.
