Slow Cooker Green Bean Recipe

Ingredients

  • 2 16 ounce bags of frozen green beans
  • 2 14 ounce cans diced tomatoes
  • 1 14 ounce can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon finely chopped fresh ginger
  • 1 1/2 teaspoons sea salt
  • 2 cloves garlic minced
  • 1 tablespoon fresh lime juice
  • 1/3 cup roasted peanuts chopped

Instructions

  1. Add frozen green beans to the slow cooker.
  2. In a medium bowl, stir together tomatoes, coconut milk, red curry paste, ginger, salt, and garlic. Pour over green beans.
  3. Set slow cooker to low and cook 7 hours.
  4. Before serving, stir in fresh lime juice and top with chopped peanuts.
