Sheet Pan Herb Chicken

Ingredients

  • 8 drumsticks can be skinless
  • 2 tablespoons lemon juice
  • 2 large cloves garlic minced
  • 2 tablespoons chopped fresh sage or 2 teaspoons dried
  • 2 tablespoons chopped fresh rosemary or 2 teaspoons dried
  • 2 tablespoons chopped fresh thyme or 2 teaspoons dried
  • 2 teaspoons olive oil
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 1 pint cherry or grape tomatoes

Instructions

  1. Preheat oven to 425. Grease a sheet pan.
  2. In a large bowl, whisk together lemon juice, garlic, sage, rosemary, thyme, olive oil, mustard, and salt and pepper. Add drumsticks to bowl and toss to coat.
  3. Place drumsticks on baking sheet. Surround with tomatoes. Drizzle any remaining lemon juice mixture over chicken pieces.
  4. Roast drumsticks for 20 minutes. Turn pieces over and roast an additional 20 minutes.
