How to Make Ropa Vieja in the Slow Cooker
can organic diced tomatoes
organic tomato paste
small green pepper
organic pure cane sugar
sea salt and ground pepper
pitted and sliced green olives
apple cider vinegar
In the bottom of the slow cooker, combine the broth, tomatoes, tomato paste, onion, green pepper, garlic, cumin, oregano, and sugar. Stir to create a sauce.
Lay flank steak on top of the sauce. Sprinkle with salt and pepper.
Cover and cook on low for 8 hours.
Remove steak from slow cooker. Add apple cider vinegar and olives to the sauce and stir.
Shred steak with two forks. Return to the slow cooker and toss with the sauce before serving.
