Easy No Bake Lemon Truffles Recipe

Ingredients

  • 1 cup chopped pitted dates
  • 1 cup walnuts
  • 1 cup almond flour
  • 1/4 cup lemon juice
  • 2 teaspoons freshly grated lemon zest
  • 1/2 cup unsweetened shredded coconut

Instructions

  1. In a food processor, pulse together dates, walnuts, almond flour, lemon juice and lemon zest. Mixture should form a ball.
  2. Roll mixture into 1 inch balls. Roll in coconut flakes and refrigerate until serving.
