Canning Apples for Pie Filling


  • 3 cups sugar
  • 3/4 cup cornstarch
  • 2 teaspoons homemade apple pie spice
  • 1 teaspoons salt
  • 1.5 quarts water
  • 2 tablespoons lemon juice
  • 3 quarts organic apples peeled, cored, and chopped (about 16 medium apples)


  1. Mix sugar, cornstarch, apple pie spice, and salt together in a large stock pot.
  2. Stir in water and bring to a boil over medium heat. Once the mixture has thickened, remove from heat.
  3. Add apples and lemon juice to the stock pot and stir well.
  4. Prepare your water bath.
  5. Fill your sterilized canning jars leaving about a half an inch open at the top.
  6. Wipe rim of each jar before capping with new lids and clean rings.
  7. Process in a water bath canner for 20 minutes.
