Cheeseburger Soup


  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 3 cups diced potatoes
  • 2 cups water or broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped celery
  • 2/3 pound ground beef
  • 2 cups milk
  • 3 tablespoons oat flour
  • 1 cup shredded cheddar cheese


  1. Melt butter in a large saucepan. Add onion and saute until translucent.
  2. Add diced onions, potatoes, water, salt, pepper, and celery. Bring to a boil. Reduce heat and cover. Simmer for 15 minutes.
  3. While soup cooks, brown ground beef. Drain.
  4. Whisk the oat flour into the milk until smooth. Add to soup, stir constantly, and cook until thickened.
  5. Add ground beef and shredded cheddar. Serve.

SLOW COOKER INSTRUCTIONS: Brown ground beef in skillet on stove. Add onions, potatoes, water, salt, pepper, celery and ground beef to a slow cooker. Cook on low 6-8 hours. Whisk oat flour into milk until smooth. Add milk mixture and cheese to slow cooker. Stir and cook an additional 30 minutes.
