If you own a food processor, you can whip up this shredded carrot apple salad recipe in minutes.
I’ll let you in on a little secret. I don’t scrape my carrots. I just scrub them, then shred them. One less step always makes me happy.
This recipe calls for sugar in the dressing. You need the citrus juice to keep the apple from turning brown, so you need to counteract that with a little sweet.
If you prefer to go the whole foods route, honey works awesome in this recipe. It mixes well with the citrus juice.
Use whatever combination of citrus juice you have on hand. I’ve used lemon and lime, orange and lime, orange and lemon… you get the idea!
Shredded Carrot Apple Salad Recipe
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- 1 tablespoon sugar
- 2 cups shredded carrot
- 2 cups shredded apple
- 1/4 cup craisins
- In the bottom of a serving bowl, stir together the juices and sugar.
- Add the shredded carrots and apples. Toss until well combined.
- Stir in craisins.
I used Craisins in this salad since that is what I purchased for my Costco cooking challenge. However, if you have dried cherries or raisins at home, those taste great in this recipe too!
