Restaurant Worthy Grilled Chicken Berry Salad Recipe
When we really like a meal in our house, we tease and say they are “Restaurant Worthy”.
This salad definitely earns that title.
It earns a place on our dinner table throughout the summer when berries are at their peak freshness.
By the way – if you want this salad in the winter? I always buy my berries at Costco in the winter. I don’t know how, but they always seem to have the sweetest berries all year round.
This recipe is my favorite way to serve this salad, but everything can be varied.
No blueberries? Add raspberries.
Don’t like spinach? Try it on a bed of spring mix!
Not a fan of blue cheese? Why not try feta?
No time to make the homemade dressing? Substitute your favorite balsamic vinaigrette. OR! If you haven’t tried my almost empty jar mustard vinaigrette – it is fantastic on salads like this!
You get the idea. Take this base recipe and play with it all summer long until you find your personal favorite.
Or simply mix it up so you can have an easy meal one night a week all summer long without a small rebellion from your family.
