Cran-Apple Caflouti is a classic French dessert that looks impressive but it easy to bake.

If you’ve ever struggled with pie crusts, a cafloutis is a great dessert to substitute for pie.
The caflouti is fairly non-fuss. Unlike a pie, you need not worry about shrinking crusts or burning edges or tinfoil tents.
No, a caflouti gives you all the amazing taste of fall with a minimum of fuss.
If you are new to the cafloutis, it is traditional French dessert made with fruit and a rich filling that is a delightful combination of smooth and custardy.
For this caflouti recipe, I suggest you chose a tart apple, I prefer a granny smith.
There is something about the tart of the apple that just plays nicely against the sweet of the dried cranberries.
But don’t take my word for it, give this recipe a go. It may just become your family’s favorite fall dessert.
Cran-Apple Caflouti Recipe
- 1/2 cup dried cranberries
- 1/2 cup boiling water
- 1 1/4 pound tart apples peeled and sliced
- 3 tablespoon butter
- 1/3 cup brown sugar
- 1/2 lemon
- 3 eggs
- 1 cup milk
- 4 tablepoon melted butter
- 2/3 cup flour
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla Extract
Preheat the oven to 400 degrees.
In a small bowl, pour boiling water over dried cranberries and allow cranberries to plump while you peel and slice the apples.
Peel and slice apples.
To a frying pan, add cranberries with water. Then add the apple slices, brown sugar, lemon juice, and 3 tablespoons of butter. Cook, stirring frequently, for about 7 minutes or until the apples just start to soften.
Place 1 tablespoon butter in a pie plate and place in oven to melt.
In a blender, add the eggs, melted butter, milk, vanilla, flour, and salt. Blend just until combined.
Pour half the blended batter into the prepared pie plate.
Layer cran-apple mixture over batter being sure to save the juices from the fry pan.
Pour last half of the batter over the cran-apple mixture and bake in the preheated oven for 25 to 30 minutes, or until set.
Warm pan juices and drizzle over Clafoutis as you serve it.
Serve your cran-apple cafloutis warm with a drizzle of the juices. A dollop of homemade whipped cream is always a nice touch too!
