Pop into Trader Joe’s to grab all the ingredients you need for chicken Prosciutto mozzarella and prepare to eat the best meal of your life.
I had the hardest time coming up with what to call this recipe.
Basically, it is a shortcut Chicken Saltimbocca.
But I struggle to spell saltimbocca, so I figured maybe some of you do too.
Therefore, although it lacks any sort of creativity, I decided to call it by its three ingredients:
Anyway, whatever you want to call it, you are going to want to make this recipe on the regular.
This was one of the recipes I started making when we were moving, and I didn’t really know where any of my cooking utensils were, and I barely had any energy to cook anyway.
Listen, if you don’t have a Trader Joe’s, you can just grab some frozen breaded chicken tenders from wherever you shop. I’m sure they’ll stand in just fine.
You’ll start by thinly slicing the mozzarella cheese.
I’m not suggesting you skimp on the mozzarella. However, if you buy a really good mozzarella, a little will go a long way.
I like to buy the balls of fresh mozzarella. They taste way better than any block of cheese.
Did I mention you don’t need to defrost the frozen breaded chicken?
Well, you don’t!
Imagine that! No need to plan ahead and defrost anything! Oh happy day!
Your final step is to wrap the Prosciutto around your chicken tender and mozzarella.
Keep going. I use the entire package of Prosciutto. The Trader Joe’s brand of Prosciutto has about 8 slices in the pack. That would give you 2 tenders per serving.
Place your Prosciutto wrapped chicken on a baking sheet.
Pop these bad boys into a 425-degree oven for 20-25 minutes.
Ta-da! That is it. That’s all it takes to get this scrumptious chicken Prosciutto mozzarella dish on a plate.
- 8 breaded chicken tenders (I use Trader Joe's)
- 4 ounces mozzarella cheese
- 8 slices Prosciutto
Preheat oven to 425.
Thinly slice mozzarella.
Take one frozen breaded chicken tender and top with a slice of mozzarella cheese. Wrap with a slice of Prosciutto. Place on a baking sheet.
Repeat for all 8 chicken tenders.
Bake for 20 to 25.
Serve and enjoy!

It is traditional to serve Chicken Saltimbocca with sauteed spinach, so that is what I tend to do. It is also good with a buttered Parmesan pasta or rice.
