This simple recipe for baked eggs in tomato sauce has so few ingredients, it’s an easy recipe to memorize.
First, you’ll create an easy homemade tomato sauce by sauteeing onions then adding spices and tomatoes.
After you’ve allowed that mixture to cook down, you’ll transfer the sauce to a cast iron skillet. Crack eggs on top of the sauce then pop into the oven until the eggs are set.
This is a humble meal but it never fails to satisfy.
In Colorado, I can purchase a dozen organic eggs for around $5. In fact, the ingredients in this recipe can be purchased organically and will still cost you under $10. If you are feeding a family of 4 – that’s only $2.50 a person for an organic dinner.
We love to serve this with a hot loaf of crusty bread. Tear off pieces and use to dunk into the sauce.
A quick, simple salad makes this a complete meal.
Baked Eggs in Tomato Sauce
Ingredients
- 1 tablespoon olive oil
- 1 small chopped onion
- 2 cloves of garlic minced
- 1 teaspoon cumin
- 1 tablespoon paprika
- 1 28 oz can whole tomatoes or 2 (14) oz canned diced tomatoes
- 8 large eggs
- pinch salt
Instructions

Preheat oven to 350.

Heat olive oil in pan. Add onion and cook until translucent - about 6 minutes. Add garlic, cumin, and paprika and cook an additional 2 minutes.

If using whole tomatoes, pour tomatoes in a bowl and chop. Add chopped tomatoes to the cooking onions. Turn heat to medium low and allow to cook down for about 20 minutes.

Spread tomato mixture in the bottom of cast iron skillet or a 9x9 pan.

Crack eggs on top of tomato mixture. Place in oven and cook for 24 to 26 minutes.
Eggs in tomato sauce is a perfect fit if you are trying to eat healthy and trim money from your grocery budget.

I have a thing about eggs. I’ll only eat them if they’re scrambled or I’ll just eat the whites. So this won’t work for me 🙁 I do know that scrambled eggs and tomato sauce is delicious though. I guess I could try it that way and cook a shorter time.

just wanted to chime in that you can do this on the stove top too, in a large skillet (which makes it a really quick meal) by sautéing your onion etc adding the tomatoes and then (once the tomatoes are nice and hot) break your eggs open on top of them…if you want the egg whites cooked all the way then i put the lid on for a a minute or two…the steem cooks them. This recipe is really the best in the summer though, when you can use fresh tomatoes instead of a can! my whole family loves it …we like it with fresh bread for sopping up the yummy yolk and tomato juice at the end.
