#1 I love getting mail. Everyone in the house knows not to get the mail, that it is my job, because I love it so. The idea of Happy Mail makes me, well, happy.

#2 We now “share custody” of a sweet little miniature schnauzer. My husband’s grandmother moved into assisted living and can’t keep her dog full time. We keep her at night and bring her to the assisted living facility during the day. She is such a sweet dog! (Spoiled too.) I’m thinking I might need to try this darling idea for a repurposed dresser drawer.

#3 I did not know you could make your own apple cider vinegar. Looks like a great way to use up your apple cores!

Healthy Egg Salad Recipe

This healthy egg salad recipe with avocado has become my go-to lunch! It’s delicious in a pita, tastes great wrapped up in a lettuce leaf, and can be served “inside-out”.

What’s inside-out? Leave out the celery when making the egg salad. Then stuff the egg salad in the celery to serve. Yummy.

This recipe calls for grated red onion. I think it is the key to the salad. It imparts the flavor of the onion but you don’t end up biting into a piece of onion. Know what I mean?

Finally, when it comes to seasoning the salad with salt and pepper, this is my trick.

Healthy Egg Salad Recipe with Avocado


  • 6 hard boiled eggs
  • 1 avocado
  • 1 tablespoon lemon juice
  • 2 tablespoons grated red onion
  • 1/4 cup chopped celery
  • salt and pepper to taste


  1. In a small bowl, mash the hard boiled eggs.
  2. In a second small bowl, mash together the avocado, lemon juice, and red onion.
  3. Stir together the eggs, the avocado mixture, and the chopped celery. Season to taste with salt and pepper.

This healthy egg salad recipe is a great afternoon snack for the kiddos, especially if they have a sport that afternoon. It fills them up without weighing them down.

It’s back and better than ever! The GBG List of Three. Three things I love. Three things I want to share.

#1 My Fitbit Flex.

5 of the moms from my daughter’s volleyball team have purchased and are using Fitbits.

Over the last 4 weeks we have been competing with ourselves, as well as with each other.

I’m in love with this device. Until I started wearing it, I would have said that I was active everyday. But I’ve since learned while I’m busy everyday, it doesn’t exactly translate into active.

The Fitbit’s main function is one of a pedometer. You set your own goal for the number of steps you want to get in every day, but the recommended number of steps is 10,000. (check out the site to see everything it can do from tracking calories to tracking sleep)

What I found from wearing my Fitbit is: A day of running errands, cooking, and cleaning did not translate into getting 10,000 steps. So while I thought I was “running around” it turns out I wasn’t running at all!

Not only has it motivated me to move more, but it has been fun to compete with my friends.

How competitive are we? Imagine getting a text at 10:30 at night with a photo of the number of steps your friend took – and it is 10 more than you took.

So they beat you. By 10 steps.

Do you get out of bed and walk a few more steps? (Of course I did!)

#2 Super simple Easter idea. And an FYI: Whole Foods Market has inexpensive organic fruit cups.

#3 I recently served my family this recipe and it received high marks all around. Bonus: It’s a Crockpot recipe. I’d definitely recommend it!

Eco Friendly Cleaning Products You Can Buy at the Dollar Store

Do you think it is expensive to purchase eco friendly household cleaning products?

I recently went to my local dollar store and found you can buy all sorts of eco friendly household cleaning products for just a dollar!

1. Vinegar– The dollar store sells 32 ounce bottles of vinegar. Vinegar is an awesome eco friendly cleaner. If you’ve never used it before, I recommend it for cleaning pots and pans, cleaning toilets, and for cleaning your outdoor living spaces.

2. Baking Soda – At my dollar store, boxes of baking soda were actually priced at only $0.59! Baking soda is another eco friendly cleaner that can be used in so many different ways. Make an all purpose scrub, or make a non-toxic carpet deodorizer.

3. Rags – Ditch the paper towel habit and pick up a stack of rags at the dollar store. My favorite rags are by Scotch Brite and are called Ultra Absorbent Shammy Towels. These suckers can sop up a spill in no time. Toss them in the wash, and they are ready for your next big spill. If you can find these at your dollar store, I highly recommend them.

4. Clothesline – Pick up a clothesline for just a buck and dry your clothes the eco friendly way. With spring here, a clothesline turns into a solar powered, inexpensive, ultra easy way to dry your clothes.

5. Wooden Clothes Pins –  If you invest in a clothesline, you’ll need clothes pins. The dollar store has a bag for just a dollar that will help you get started. Not to mention, clothes pins are handy to have around the house for organization.

6. Scrub Brushes – Replace your sponges with scrub brushes. The dollar store has a large assortment from which to pick. Scrub brushes are excellent for dish doing, tub scrubbing, grout cleaning, carpet stain removal, and patio stain removal.

How to Make Deviled Eggs

How to Make Deviled Eggs

Do you know how to make deviled eggs? They are such a quick and easy whole food snack. And this recipe is near impossible to mess up.

There are many variations of deviled egg recipes. This one is a classic. It calls for a combination of mayo, mustard and chives.

If you wish, you can substitute an equal amount of plain Greek yogurt for the mayo. I find I can eat so many of these, that lightening them up with Greek yogurt isn’t always a bad thing.

By the way, I’ve never been able to pipe the filling into the egg white. If you have that talent, it does make for a pretty presentation. However, I find a few shakes of paprika and a few chopped chives can cover up my lack of piping skills!

How to Make Deviled Eggs


  • 12 hard boiled eggs, peeled and sliced in half lengthwise
  • 1/2 cup mayo or may substitute Greek yogurt
  • 1 teaspoon sea salt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chives, finely chopped
  • 1 tablespoon shallots, finely chopped
  • optional: paprika


  1. Remove egg yolks from eggs.
  2. In a bowl, mash together egg yolks, mayo, salt, and mustard.
  3. Stir in chives and shallots.
  4. Place egg whites on a platter. Use a 1 teaspoon scoop to put yolk mixture into hollows of egg whites.
  5. Optional: Sprinkle eggs with paprika and additional chopped chives
  6. If you prefer a fancier presentation, use a piping bag and pipe filling into egg white hollows.

Do you ever serve deviled eggs for a snack? They are excellent for an after school snack. Serve them on days when your kiddos have sports practice, and fill them up without weighing them down.
